Ingredients for pot-boiled milk tea

Toffee Caramel Sauce Ingredients

*Advanced version can replace raw water with black tea soup.


apparatuses

  • Milk Tea Pot A (for syrup): Approx. 2 litres 18cm in diameter
  • Milk Tea Pot B (with lid): Approx. 1 litre diameter 16cm
  • Glass measuring cups (500ml): 2 pcs.
  • Ordinary measuring cups (200ml): 3 pcs.
  • Mixing spoon: 1
  • Flannel filter: 1
  • Western-style porcelain bottle (500~600ml): 1 handle
  • Western Teacup Set: 1 set
  • Clean glass jar (for syrup): approx. 500ml size
  • Electronic Scale: 1 table

Toffee Sauce Making


Step 1. Syrup Preparation

Complete the preparation according to the ingredient list and clean and dry the utensils for use.

Prepare the ingredients and set aside:

  1. Sugar 200g
  2. Animal Cream 200ml
  3. Raw Drinking Water 40ml
  4. Salt 2g
  5. Vanilla extract or vanilla (1g or 1 stick) 
  6. glass jar


Step 2.

Make sure the proportions are correct and use a digital scale to scale up and down to make the toffee caramel sauce.

  • Sugar: whipped cream: water = 100g:100g:20ml


Step 3. Add Raw Drinking Water

In a saucepan with caster sugar, add 40~45ml of raw drinking water, please blend the sugar water evenly.


Step 4.

Turn on medium-low heat, the kind that burns in a circle.


Step 5: Simmering

Start heating and simmering the sugar water, wait for the caramel to melt, do not stir to avoid scorching the pan, and try not to stain the edges of the pan with sugar.


Step 6: Caramel Colour Change

Caramelisation begins, avoid stirring to scorch the pan.

 


Add salt 2g

  • For flavour boosting use, you can also use liquorice powder.
  • I have used spice salt, but I don't feel it.
  • If you add more than 5 grams, it will taste strange, so please don't do it.

 


Step 8: Add 1g of vanilla extract.

*Vanilla pods can be used instead, but at a higher cost.


Step 9. Stir to combine

Blend and stir until large bubbles form.


Step 10: Add whipped cream

Add 200ml of the whipped cream, in small batches and mix quickly with the aid of a whisk.

* :: Vegetable whipped cream is fine, but it doesn't taste good enough.

Whisk together the caramel and cream.

Please stir quickly to combine

The final bubbles of the toffee caramel sauce after boiling.

Step 11.

Sterilise the glass jars, blanch in hot water, finish with the toffee caramel sauce and leave to cool for later.


Toffee Pot Tea Making


Step 1. Preparation

Toffee Potpourri Tea Make the ingredients.

Complete the preparation according to the ingredient list and clean and dry the utensils for use.

Prepare the ingredients and set aside:

  1. Black Tea 10g (Mahey Brothers Royal Wedding)
  2. Raw Drinking Water 400ml
  3. Whole milk 150ml
  4. Toffee Caramel Sauce 50ml

Step 2. Hot Pot

Use a hot pot with a low flame in the centre of the cooker, and use a napkin to wipe off the water before serving. It is not recommended to use a wet pot to heat and dry the tea leaves, as it will easily scorch the tea leaves.


Step 3: Add Tea Leaves

* :: Put in 10g of blended black tea

 


Step 4.

Stir fry on low heat for 15 seconds (no smoking)


Add raw drinking water.

*Room temperature drinking water 400ml (water evaporation sound squeaking~normal)

 


Step 6. Make Tea

For room temperature raw drinking water, cook on high heat for 3 minutes, then reduce the heat to low and keep the water bubbling.

*Cook for about 4 minutes in total, the colour will slowly intensify.


Step 7. First Stirring

Use a stirring spoon and stir clockwise throughout the process. The more turns you make, the stronger the flavour of the tea will be. It is recommended that you make about 30 turns slowly to increase the strength of the tea.


Step 8. Add milk.

Step 9. Stirring for the second time

Suggested number of turns ”10” Slowly control the temperature to 88 degrees. Try to keep the temperature of the pot as low as possible so that the milk does not boil.


Step 10: Add toffee sauce

Add 50ml and stir well. If you like sweet, you can add more.


Step 11: Turn off the heat with the lid on

Allow to simmer for 1 minute and prepare filtering supplies and clean countertop.

 


Step 12: Clean the countertop

Clear the countertop, leaving only the following items:

  1. Filters scalded with hot water
  2. Cooked pot with milk tea
  3. Western-style porcelain bottle
  4. Western Teacup Set


Step 13. Filtering

Prepare to separate the tea broth from the ingredients. Use a flannel strainer to separate the tea leaves from the pot, and you will have a delicious pot of milk tea.


Step 14. Wipe out the cup

After filtering, wipe the bottle with a napkin to clean it.


Step 15.

Pour the tea broth directly into the finished cup and the Toffee Caramel Potpourri Milk Tea is complete.


Step 16: Upgrade and add flavour

For an advanced version, you can add some of the toffee caramel sauce to the cup first, and then use the syrup with hot milk tea for a richer flavour, and the pattern will be like the one shown in the picture.
