ingredients
- Assamese Tea : 10 g
- Raw Drinking Water (room temperature): 450 ml
- cow's milk (full fat): 200 ml
- brown sugar: 30 g
- Black pepper: 2 g
- Cinnamon bark/horn: 10 g
- Cumin: 2 g
- Cloves: 0.3 g (3)
- Green cardamom: 0.6 g (3 pcs)
- Star anise: 0.5 g (half)
- Laurel Leaf (for decoration) 2 pieces
- Cinnamon stick (for decoration) 1 stick
apparatuses
- Milk tea pot (with lid)Approx. 1 litre diameter 16-18cm
- Glass measuring cups (500ml): 2 pcs.
- Mixing spoon: 1
- Flannel filter: 1
- Western-style porcelain bottle (500~600ml): 1 handle
- Western Teacup Set: 1 set
- Electronic Scale: 1 table

Step 1. Preparation
Complete the preparation according to the ingredient list and clean and dry the utensils for use.
Prepare the ingredients and set aside:
- Assam Girl Black Tea 10g
- Raw Drinking Water 450ml
- Fresh Milk 200ml
- Brown sugar 30g
- Flavourings (can be fine-tuned)
- Decorations (can be fine-tuned)

Step 2: Add spices and tea leaves.
Put in the prepared spices and tea leaves, the flavour should be heavy you can boil the spice water first, then add the tea in the second section.

Step 3. Hot Pot
Heat the pan on a low flame in the centre of the hob, controlling the heat. Bake over a low heat and it is recommended that you bake about 10cm away from the heat.

Step 4: Stir fry the tea leaves and spices.
Stir-fry the tea leaves for about 30 seconds (can be done in two stages, half off the fire, no smoking).

Step 5: Add raw water
Add room temperature drinking water 450c.c. (water evaporation sound is squeaky~normal) For those who like strong flavour, you can reduce the amount of water and increase the proportion of milk.

Step 6. Make the tea.
For room temperature raw drinking water, cook on high heat for 2 minutes, then reduce the heat to low and keep the water bubbling.

Step 7. Stir for the first time.
Use a stirring spoon and stir clockwise throughout the whole process. The more turns you make, the stronger the tea flavour will be, and it is recommended that you make 10 turns slowly to complete the first stage.

Turn down the heat to low and cook.
Cook for about 4 minutes, slowly thicken the colour and wait for 30 seconds for the tea to increase in strength, wait for the time to add the lid to increase the strength and flavour will be better.

Step 9. Add milk.
It can also be added in batches.

Step 10: Stir for the second time.
It is recommended to stir clockwise, slowly for "10" turns to blend evenly. Temperature control: 88 degrees. Try to keep the temperature of the pot as low as possible so that the milk doesn't boil, and to keep the bubbles on the side of the pot.


Step 11. Add Sugar
Add 30g of brown sugar or brown sugar (add more for better taste) Remember to stir properly to dissolve the sugar.

Step 12.
Add a bay leaf to the spice before covering, or leave it out for decorative purposes. This stage is just to add a slight sweet aroma, if you like the aroma of bay leaves, you can add a whole leaf at the beginning of the spice stir-fry.

Step 13.
Leave to simmer for about 2 minutes and turn off the heat.

Step 15: Clean the countertop
Leave only the following items:
- Cooked pot with milk tea
- Filters scalded with hot water
- Western-style porcelain bottle scalded with hot water
- Hot Water Scalded Western Tea Cup Set
- Cinnamon sticks and laurel leaves for decorative purposes

Step 16: Filtering
Let it sit, open the lid, and prepare to separate the tea broth from the ingredients. Use a flannel strainer to separate the tea leaves from the pot, and you'll have a delicious pot of milk tea.

Step 17.
Wipe and prepare the cups. Choose a favourite cup and pour the pot-boiled milk tea into it.

Step 18.
The spice pot for milk tea is finished. It is recommended to drink it hot, although this version can be served iced, but the spices don't perform as well as the hot drink.
