Milk Tea in European Style

European Style Milk Tea andEnglish Boiled Milk TeaA little different, featuring more milky flavour, this is a version that can be called a thick milk tea outside, milk lovers who like to drink hot milk should not miss it, this method makes good use of it!"Milk then tea"It is recommended to use low-temperature sterilised milk to fully present the characteristics of the milk, and the difficulty of cooking will be a little higher, if you are not familiar with the operation of the milk tea, it is recommended to start from the English pot to learn first.

Remember, "Milk is the key to the flavour of any black tea." So choose your milk carefully.

  • Milk tea pot (with lid) A pot: about 1 litre diameter 16cm
  • Milk tea pot (with lid) B pot: approx. 2 litres 18cm diameter
  • Glass measuring cups (500ml): 2 pcs.
  • Mixing spoon: 1
  • Flannel filter: 1
  • Western-style porcelain bottle (500~600ml): 1 handle
  • Western Teacup Set: 1 set
  • Electronic Scale: 1 table

Step 1. Preparation

Complete the preparation according to the ingredient list and clean and dry the utensils for use.

  • Black Tea Leaves ( 15g ) * You can use only 5g if you like milky flavour.
  • Raw Drinking Water ( 400ml )
  • Milk ( 250ml )
  • Brown sugar or brown sugar ( 15g )


Step 2. Hot Pot

Heat pan A (right side) first.

Step 3. Add Tea

In Pot A, add 15g of tea for this demonstration.

*If you love heavy cream flavour, you can change it to 5g.

*The tea can be slightly toasted for 15 seconds, but should not be too long as it will burn (low heat).

 


Step 4. Add water

In Pot A, add room temperature raw drinking water.

Don't be afraid of the boiling sound.


Step 5. Make Tea

In pot A, start to boil the tea for 3 minutes.

(Keep the heat low, no need to stir)

 


Step 6. Add milk

In pot B, add 250ml of milk from a measuring cup.

Start on low heat, no need to warm the pan first, but you will need a napkin to dry it.

* :: Keeps the heat on, but not boiling.


Step 7.

In pan A, cook for about 3 minutes, bubbling slightly.


Step 8: Pour in strong tea broth

Pour the tea broth cooked in pot A into pot B with the milk.


Step 9: Pour in the rest of the tea dregs.

Add the remaining tea residue from pot A to pot B with the aid of a stirring spoon and cook together.


Step 10. Add Sugar

Add 15g of prepared brown sugar

 


Step 11. Clockwise Stirring

Slowly stir with a stirring spoon for about 20 turns and keep from boiling.


Step 12: Steam

Turn off the heat and let it simmer with the lid on for 1 minute to allow the tea flavour to fully release and combine with the milk.


Step 13: Clean the countertop

Tidy up the work area, put all the appliances to be cleaned into the washing area, clean the countertop and prepare for filtration.

*Western-style teapots are recommended to be scalded with hot water to keep them warm.


Step 14. Filtering

Strain the tea through a flannel filter.


Step 15.

When you have finished assembling the kettle, use a napkin to clean the exterior.


Step 16.

Milk lover's favourite, the European style pot-boiled milk tea is full of milky flavour to finish.

1. Cooking time is about 10~12 minutes with proper consistency (minimum 7 minutes, maximum 15 minutes).
2. Try not to boil or preheat the pot if there is milk.
3, the use of "low-temperature bactericidal method" of milk to have the best results, such as: Xiuguluan Ruan Fresh Milk, Pops, Mizuho Extreme and so on.
4, A pot cooking tea soup, you can add additional stirring action to increase the tea flavour.
5, the most classic original version, is only 5g of black tea, but the author likes to have the feeling of tea.
6: Cook both pots at the same time, using low heat throughout is better.
