Tara's English Boiled Milk Tea
For those who want to learn"Milk Tea in a PotFor those who are interested in the method, this is the most basic recipe to start with, and it is also the original recipe for Tuan Gongzi's other advanced versions of pot-boiled milk tea, which uses a stronger tea flavour together with fresh milk and light sugar to create a natural and rounded perfect flavour, which you can't afford to miss if you love to be healthy and enjoy doing things by hand. A strong tea is a must for hospitality!

Remember, "Milk is the key to the flavour of any black tea." So choose your milk carefully.

ingredients
- breakfast tea (black tea): 12g
- Raw Drinking Water (room temperature): 500ml
- cow's milk (full fat): 100ml
- Brown Sugar / Brown Sugar : 15g (micro-sugar)
apparatuses
- Milk tea pot (with lid)Approx. 1 litre diameter 16-18cm
- Glass measuring cups (500ml): 2 pcs.
- Mixing spoon: 1
- Flannel filter: 1
- Western-style porcelain bottle (500~600ml): 1 handle
- Western Teacup Set: 1 set
Step 1
Preparation. Complete the preparation according to the preparation table and clean and dry the utensils for use.
Prepare the ingredients and set aside:
- Breakfast Tea Black Tea ( 12g )
- Raw Drinking Water (500c.c.)
- Milk (100c.c.)
- Brown Sugar ( 15g )
Step 2
Hot pot. Use a hot pot in the centre of the cooker over low heat, wipe off the water with a napkin before serving, it is not recommended to use a wet pot for drying, as it will easily scorch the tea leaves.

Step 3
Add tea leaves and raw drinking water. Don't be afraid of the boiling sound.

Step 4
Make tea. Room temperature raw drinking water, cooking time on high heat for 2 minutes, then turn down to low heat, keep into the picture slightly bubbling can be.
(Can also be done in conjunction with Steps 5 and 6)

Step 5
Using a mixing spoon, stir for the first time.
It can be done at the same time with the previous step, but it is recommended to use clockwise stirring method throughout the whole process, the more the number of turns, the stronger the tea flavour, it is recommended that the number of turns is slow ”5 turns” to complete the first stage, and wait for 30 seconds to let the tea increase in concentration.

Step 6
Using a mixing spoon, stir for a second time.
Stir the tea clockwise for about ”5 turns”, the tea leaves will be in perfect condition as shown in the picture.
(The more circles, the stronger the tea flavour)

Step 7
Add 50ml of milk.(First milk addition)

Step 8
Add the milk and lower the temperature. (Keep the heat low)

Step 9
Stir slowly and clockwise for 30 seconds.

Step 10
Add the rest of the milk 50ml (second addition)

Step 11
Add sugar.

Step 12
Stir slowly and clockwise to heat until bubbles form on the surface. (Do not boil)

Step 13
Switch off the fire.

Step 14
Cover. Smother for about 1 minute.

Step 15
Filtering.

Step 16
When you have finished assembling the kettle, use a napkin to clean the exterior.

Step 17
Out of the cup.

Step 18
The Tantalising version - English pot-au-feu finished.

1. Cooking time is about 10~12 minutes with proper consistency (minimum 7 minutes, maximum 15 minutes).
2: Add milk and try not to boil.
3. If you are afraid of failure, you can turn on the heat all the way down, but the cooking time will be close to 15 minutes.
4. The faster and more vigorously you stir, the less it usually tastes good, so don't try it.
5、If smoke comes out of the tea leaves, it means the pot is too hot and burnt.
