Thai Style Boiled Milk Tea
Thai milk tea is a bright orange colour, with lemon chicken claw and fried food is a perfect match, in Thailand does not use fresh milk tosaffron milkAlternatively, Nestle Eagle Condensed Milk is added as the key to sweetness, and the overlap of the two milk flavours is amazing. The pot-boiled version of the Thai Milk Tea is delicate and smooth, and you can also add honey, fairy grass jelly, sago pearls, coconut milk, coconut sugar, and speckled leaves to add the special flavour of Southeast Asia.

ingredients
- Thai Tea (10g)
- Raw Drinking Water (450c.c.)
- Nestlésaffron milk (150c.c.)
- Nestle Eagle Brand Condensed Milk (50c.c.)
apparatuses
- Milk tea pot (with lid) : Approx. 1 litre diameter 16cm
- Glass measuring cups (500ml): 2 pcs.
- Mixing spoon: 1
- Stainless Steel Filter: 1pc
- Western-style porcelain bottle (500~600ml): 1 handle
- Western Teacup Set: 1 set
- Electronic Scale: 1 table
- Wine measure: 1 pc

Step 1. Preparation
Complete the preparation according to the ingredient list and clean and dry the utensils for use. Prepare the ingredients and set aside:
- Thai Handmade Milk Tea : 10g
- Raw Drinking Water (room temperature): 450ml
- Nestle Triple Flower Milk: 150ml
- Nestle Eagle Condensed Milk : 50ml

Step 2: Add Tea Leaves
Add 10g of prepared Thai tea leaves, or 5g of Ceylon black tea if you prefer a variety of flavours.

Toast them, not smoking, for about 15 seconds.

Step 3. Add Raw Drinking Water
Use the small fire in the centre of the cooker to heat up the pot, this version does not need to heat up the pot, directly add 450ml of raw drinking water and start to boil the water. There is a water evaporation sound squeak ~ normal!

Step 4.
Boil the tea leaves until the colour darkens. When the tea is bubbling and the tea broth is boiling, turn down the heat.


Step 5. Add Milk of Three Flowers
Add 150ml of milk for reference, or more if you prefer a heavier milky flavour.

For those who want a stronger change in milk flavour, add 50ml of fresh milk.
Step 6. Boil Tea Fusion
While the tea is simmering and blending with the milk, keep the cooker on low heat and stir with a spoon for about 1 minute to see small bubbles around the edge of the pot.

Slowly stir for about 5-8 turns for the first time.
Step 7. Add Sweetness
To prepare condensed milk, use a wine measure twice for a total of 50ml-60ml. (If not sweet enough, add coconut sugar or more.)

Add condensed milk. Temperature control requires 88 degrees. Try to keep the temperature of the pot as low as possible so that the milk does not boil.

Step 8. Secondary Mixing
Cook with slight bubbles. Remember to stir well before starting, cover and leave to stand for 2 minutes and turn off the heat.

If you think it is not flavourful enough, you can add 50c.c. of milk and 30g of sugar (not necessary).
Step 9.
Remember to turn off the heat, cover and wait for 1~2 minutes, this is the time to clean the countertop.

Step 10. Clean the countertop
Prepare your filtering and photo taking items. Remember that flannel filter cloths and English teapot cups need to be scalded in hot water.

Step 11: Uncapping Filtering
Prepare to separate the tea broth from the ingredients. Use a flannel strainer to separate the tea leaves from the pot, and you will have a delicious pot of milk tea.

The flannel filter cloth is very fragile and easy to eat the flavour, so it is not recommended to mix it with other teas. 
Step 12. Wipe the tea set clean
Remember to wipe your jug with a napkin so that the cup stays neat and tidy.

Step 13.
Choose a favourite cup and pour the milk tea into it.

Step 14.
Finished Thai Pot Boiled Milk Tea. Prepare your Three Flowers milk, tea canister, Eagle Brand condensed milk, cups, teapot and take a photo together.

Apply and chill, if you can't finish it, you can chill it directly, or even refrigerate it and drink it the next day.
Can be additionally made into iced drinks, but need to increase the amount of tea 20%, Eagle Brand Condensed Milk 20% materials. Variations can be added with small ingredients.

- We recommend using Nestle Triple Flower Milk, Nestle Eagle Condensed Milk, other brands are not as easy to control the style.
- The Thai hand-labelled black tea is definitely coloured, and the flavour is no better than any other brand.
- Coconut sugar may be added as permitted by the situation.
- It can be boiled to boiling condition, straining should be careful that there will be dregs of tea easily.
- Add Eagle condensed milk should be more than 30ml or not sweet enough, Thai milk is not sweet and not good.
