Matcha Pot Boiled Milk Tea (Unsweetened)
Matcha is a favourite of many people, this recipe is a selection of Japanese origin matcha flavour, presenting the original matcha taste, based on the combination of pot-boiled milk tea and dessert tea technology, to make a green matcha fresh milk tea rich combination. In this version, you can select the matcha, control the pot, and adjust the flavour of the brew.

ingredients
- Matcha powder: 3g (maximum 5g)
- Raw Drinking Water (room temperature): 200ml
- Low-temperature sterilised milk (full fat): 100ml
The simpler the ingredients, the better, in order to present the nature of matcha, and the selection of matcha will directly reflect the characteristics and style of the pot of milk tea. Please pay special attention to the fact that matcha and milk recipes are relatively strong, and can easily be too full or too much to drink, and this list of ingredients is for two people, with a total of only about 300ml cups, so it's not advisable to make too large cups or exceed this total capacity, and each person only needs to have a cup of 150ml to be able to satisfy the amount of drinks.

- Milk tea pot (with lid) : Approx. 1 litre diameter 16cm
- Glass measuring cups (500ml): 2 pcs.
- Tea brush: 1pc
- Small teaspoon: 1 handful
- Sifter, filter: 1 pc.
- Stainless Steel Filter: 1pc
- Tea Bowl: 1pc
- Western Teacup Set: 2 sets
- Electronic Scale: 1 table

Step 1. Preparation
Complete the preparation according to the ingredient list and clean and dry the utensils for use. Prepare the ingredients and set aside:
- Matcha powder (sifted) 3g
- Fresh Milk 100ml
- Raw Drinking Water 200ml
- Salt 0.5g (optional)

Step 2: Sift matcha powder
This demonstration shows a total of three grams of sieved tea, and it is recommended that those who prefer strong tea should only limit their sieving to five grams.

Step 3: Add water to the hot pot
Using a hot pot on a low flame in the centre of the cooker, you can just add water and bring to a low boil.


Step 4: Add the tea leaves and remove from heat.
Throw in 3 grams of matcha powder and remember that at this point you can remove the heat from the stove and turn off the heat to lower the temperature slightly.

Step 5. First Tea Brush
Use a low flame and a tea brush to prepare the tea in the pot, brushing out the tea powder is preferred, beginners are advised to stay away from the flame for about 10cm.

This is the most difficult part of the process, because the temperature control and the brushing technique will lead to the final taste and aroma of the finished product, you can refer to the situation in the Japanese Matcha Bowl.

Step 6: Add milk
Add fresh milk 100c.c. (can be done in stages) Brush and add milk in the middle.

Step 7. Second Tea Brush

Step 8: Turn off the heat and remove from the pan.

Step 9: Serve the tea

Step 11.
If you don't finish the matcha milk tea, you can add ice directly to turn it into an iced drink. Usually, matcha milk is not drunk very quickly, so if you don't finish it once and leave it for a long time, it will inevitably sink to the bottom. Another solution is to add ice directly, and it will become the next drink.

- The quality of matcha powder has a significant impact on this recipe, so please get a good quality matcha for this recipe.
- If 3g is not enough, you can add 1-2g of Matcha Liquid in a tea bowl.
- Powders are fast releasing and should not take too long to produce.
- It will be sweeter and more astringent at lower temperatures, with a lighter brushing force, and is suitable for bright green matcha.
- High temperature control will make it more aromatic and bitter, and the brushing force should be fast, accurate and even, suitable for dark-coloured matcha.
- If you have salt on hand, add a pinch of it to enhance the flavour.
